Oooh, Chicken and Leek Pie, the quintessential British comfort food! Here is a meat free version using Quorn Chicken Style Pieces. Melting in the mouth, it is fragranced with a subtle hint of mustard and has just the right amount of creaminess. Quorn is made from a fermented mycoprotein (fungi) grown in the UK. Once collected the mycoprotein Heat a spray of olive oil in a frying pan, add the sliced leeks and fry for 5 minutes until softened. Add the garlic for a minute, then add the chicken. Fry for another 5 minutes, then stir in the flour. Stir in the crème fraîche and the stock, season and bring to a simmer. Heat a dash of olive oil in a large frying pan and cook the chicken pieces over a high heat for 3 minutes. Add the leek, garlic, soft cheese, mustard, stock cube and 200ml/7fl oz boiling water.... Line an oven proof dish with one of the pastry sheets. Boil and mash the potatoes with plenty of Flora, salt, pepper and 2 teaspoons of mustard. Chop and boil the leeks then drain, pour in the carton of cream and simmer with a couple of dessert spoons of Flora and salt and pepper.
